I made the yummiest dinner last night that was a huge hit with both Princess and BFF, who was staying with us because her mom had to work late. (She'll be with us a lot this week. It's early release at school due to midterm exams all week and then no school Friday or Monday.)
I put out a tray of veggies and light ranch dressing right before I started cooking.
They went crazy for the spinach. They asked for seconds and thirds.
Then Princess told BFF about the green smoothies we've been enjoying in the mornings. BFF asked if she could try it, so Princess whipped up a blender full. BFF had three cups of it.
I sauteed onion slices in coconut oil until they were caramelized while I grilled up some chicken on the George Foreman grill.
I served lemon couscous with it. This is my plate. The bit of veggies on my plate was all that was left of the platter I started them with. Notice the two empty smoothie cups next to the empty tray. Those girls were loving spinach.
I whipped up some homemade banana ice cream for dessert.
This is so easy and yummy! I just threw chunks of frozen banana in a blender with a spoonful of peanut butter and a little dark chocolate almond milk. It has the look, taste and texture of soft serve ice cream. SO YUMMY.
All of it was so yummy!

Smoothies with spinach are so good! It doesn't taste spinach. It just tastes really fresh. Use dark berries to hide the green if it creeps you out. You have to try the banana ice cream. SOOO good.
